This is merely a test recipe to see if I can come up with a good-tasting, alternative-type tea biscuit! I will be tweaking this further! Anyone else wishing to tweak, please do so, and have fun with it! :+D

Ingredients
  • 1 cup self-rising flour
  • 1 egg
  • 1/4 cup corn meal
  • 1/2 tsp salt
  • 1/2 tsp dehydrated garlic & herb spices
  • ( I used McCormack’s no-salt-added variety)
  • 1/4cup olive oil
  • 1/4 cup water

Directions
  1. Dust baking sheet with cornmeal
  2. Combine all wet and dry ingredients in bowl.
  3. Mix thoroughly
  4. Form four patty-sized rounded biscuits and place on baking sheet
  5. Sprinkle with coarse salt
  6. Bake @ 350*F for 15 to 20 minutes
  7. TEST RESULTS
  8. Taste == excellent
  9. Grain == even; well balanced
  10. Rising == inadequate
  11. Slicing quality == good
  12. Freezing quality == excellent

Alterations


Hello Chef Elaine. You might try this:
Add a little more baking powder and baking soda. Half the cornmeal. Sometimes cornmeal tends to make rising more difficult in biscuits like these.
Self-rising flour does contain some baking soda and baking powder, but not much.
Hope my suggestion helps. Otherwise, your test recipe looks excellent.
