Fennel -Rubbed Pork With Shallot - Pomegranate Reduction Recipe
Wonderful pork tenderloin with shallot-pomegranate sauce.

  • Sauce:
  • 11/2c pomegranate juice
  • 1/2c orange juice
  • 1/3c chopped shallots
  • 3Tbs sugar
  • 4tsp. chilled butter,cut in small pieces
  • 1Tbs red wine vinegar
  • 1/4tsp salt
  • Pork;
  • 3/4tsp fennel seeds,crushed
  • 1/2tsp garlic powder
  • 1/2tsp ground cumin
  • 1/4tsp salt
  • 1/4tsp black pepper
  • 1(1lb) pork tenderloin,trimmed
  • 1 tsp. olive oil

Directions
  1. Preheat oven to 450
  2. To prepare sauce:Combine first 4 ingredients in a saucepan;bring to a boil. Cook until reduced to 1/2c(about 18 mins.). Remove from heat. Gradually add butter'stir with a whisk until blended. Stir in vinegar and 1/4tsp salt.
  3. To prepare pork: Whie sauce reduces,combine fennel,garlic powder,cumin,1/4 tsp. salt and pepper;rub over pork. Heat oil in large ovenproof skillet over med-hig heat. Add pork;cook 2 mins on each side or till browned. Place skillet in the oven. Bake for 18 mins or till thermometer reads 155(slightly pink). Let stand 5 mins; cut into 1.4" slices. Serve with sauce.
