Fennel -Rubbed Pork With Shallot - Pomegranate Reduction

- Sauce: shopping list
- 11/2c pomegranate juice shopping list
- 1/2c orange juice shopping list
- 1/3c chopped shallots shopping list
- 3Tbs sugar shopping list
- 4tsp. chilled butter,cut in small pieces shopping list
- 1Tbs red wine vinegar shopping list
- 1/4tsp salt shopping list
- Pork; shopping list
- 3/4tsp fennel seeds,crushed shopping list
- 1/2tsp garlic powder shopping list
- 1/2tsp ground cumin shopping list
- 1/4tsp salt shopping list
- 1/4tsp black pepper shopping list
- 1(1lb) pork tenderloin,trimmed shopping list
- 1 tsp. olive oil shopping list
How to make it
- Preheat oven to 450
- To prepare sauce:Combine first 4 ingredients in a saucepan;bring to a boil. Cook until reduced to 1/2c(about 18 mins.). Remove from heat. Gradually add butter'stir with a whisk until blended. Stir in vinegar and 1/4tsp salt.
- To prepare pork: Whie sauce reduces,combine fennel,garlic powder,cumin,1/4 tsp. salt and pepper;rub over pork. Heat oil in large ovenproof skillet over med-hig heat. Add pork;cook 2 mins on each side or till browned. Place skillet in the oven. Bake for 18 mins or till thermometer reads 155(slightly pink). Let stand 5 mins; cut into 1.4" slices. Serve with sauce.
