Buffalo and Cabbage Soup

- 1 lb ground buffalo shopping list
- 1 large onion shopping list
- 1 head green cabbage shopping list
- 2 small cans tomato paste shopping list
- 2 quart chicken or beef stock shopping list
- 3 cloves garlic shopping list
- 1/2 teaspoon thyme shopping list
- 1/2 teaspoon black pepper shopping list
- 2 bay leaves shopping list
- salt to taste shopping list
- sour cream (optional) shopping list
How to make it
- Quarter cabbage head and thinly slice, small dice onions
- In a heavy 6 quart soup pot brown ground buffalo on high heat
- add onions cook till translucent
- add garlic and spices cook for 1 minutes but do not brown garlic
- add slice cabbage
- add tomato paste stir and cook 5 more minutes
- add stock, bring to boil simmer for an hour
- adjust seasoning and serve with a tablespoon of sour cream on top
