Baked Potato Soup

- 2 1/2 lbs potatoes shopping list
- 2/3 cup flour shopping list
- 6 cups reduced fat milk shopping list
- 3/4 cup reduced fat shredded cheddar cheese shopping list
- salt and pepper (to taste) shopping list
- 1 cup reduced fat sour cream shopping list
- 1/2 cup chopped green onions/chives shopping list
How to make it
- Bake potatoes until tender(approximately an hour at 400)
- Remove skins from potatoes and mash to desired consistency
- Place flour in large pot on stove
- Stir in milk
- Heat on medium for about 8 minutes until thickened and bubbly
- Stir in potatoes and cheese until cheese is melted
- Turn stove to low and stir in sour cream and chives
- Let heat for 10 more minutes (do not allow to boil)
- Garnish with toppings as desired
