Linguine With Eggplant

- 1 pound linguine shopping list
- 2/3 cup olive oil divided shopping list
- 2 small eggplant cut into 1/2" chunks shopping list
- 3/4 teaspoon garlic powder shopping list
- 1/2 teaspoon dried oregano shopping list
- 3/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 4 plum tomatoes chopped shopping list
- 2 tablespoons fresh parsley chopped shopping list
How to make it
- In large pot cook linguine according to package directions then drain well.
- Place linguine in a large bowl and toss with 2 tablespoons olive oil then set aside.
- In the same pot heat remaining oil over medium high heat then sauté eggplant 12 minutes.
- Add garlic powder, oregano, salt, and pepper then sauté 5 minutes more.
- Add the tomatoes, parsley and linguine and toss gently until heated through then serve at once.
