How to make it

  • In large pot cook linguine according to package directions then drain well.
  • Place linguine in a large bowl and toss with 2 tablespoons olive oil then set aside.
  • In the same pot heat remaining oil over medium high heat then sauté eggplant 12 minutes.
  • Add garlic powder, oregano, salt, and pepper then sauté 5 minutes more.
  • Add the tomatoes, parsley and linguine and toss gently until heated through then serve at once.
