LINGUINE WITH EGGPLANT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hamm Estate in Plano, Texas in 1999.

Ingredients
  • 1 pound linguine
  • 2/3 cup olive oil divided
  • 2 small eggplant cut into 1/2" chunks
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 plum tomatoes chopped
  • 2 tablespoons fresh parsley chopped

Directions
  1. In large pot cook linguine according to package directions then drain well.
  2. Place linguine in a large bowl and toss with 2 tablespoons olive oil then set aside.
  3. In the same pot heat remaining oil over medium high heat then sauté eggplant 12 minutes.
  4. Add garlic powder, oregano, salt, and pepper then sauté 5 minutes more.
  5. Add the tomatoes, parsley and linguine and toss gently until heated through then serve at once.
