TENDER BRAISED BEEF This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hellmann Estate in Lewisville, Texas in 1982.

Ingredients
  • 1 green onion trimmed and cut into 2” pieces
  • 1/4 cup sherry
  • 3 garlic cloves crushed
  • 1 teaspoon grated peeled ginger root
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2-1/2 tablespoons peanut oil
  • 2-1/2 pounds chuck steak cubed
  • 3 cups chicken broth

Directions
  1. Whisk onion with sherry, garlic, ginger, sugar, salt and pepper in small bowl then set aside.
  2. Heat peanut oil in heavy skillet over medium high heat then brown quickly on all sides.
  3. Add sherry mixture and cook stirring for 3 minutes then add chicken broth.
  4. Simmer covered 2 hours or until meat is tender.
