German Apple Pancake

- 1/2 cup all-purpose flour shopping list
- 1/2 teaspoon salt shopping list
- 3 eggs, room temperature shopping list
- 1/2 cup Half and Half OR whole milk shopping list
- 2 tablespoons unsalted butter shopping list
- 2 tart apples, peeled, cored and thinly sliced shopping list
- 1 tablespoon firmly packed dark brown sugar shopping list
- 1/4 teaspoon ground cinnamon shopping list
- Pinch of grated nutmeg shopping list
How to make it
- Preheat oven to 475 degrees F (250 degrees C).
- Whisk together flour and salt in a medium bowl.
- Whisk together eggs and milk in a small bowl.
- Gradually mix the wet ingredients into the flour until just blended.
- DO NOT OVERBEAT.
- Melt butter in an ovenproof skillet over medium heat.
- Add apple slices and brown sugar.
- Saute apples until tender, about 3 to 5 minutes.
- Stir in cinnamon and nutmeg.
- Pour batter over apples and place pan in oven.
- Bake until puffy and golden, about 10 to 15 minutes.
- Remove from oven.
- Place serving platter over skillet and quickly invert pancake onto platter.
- You may also serve the pancake directly from the skillet.
- Squeeze the juice of 1 lemon WEDGE over pancake.
- Dust with confectioners' sugar.
- Slice and serve immediately.
