This is a standard Mango Lassie recipe that you can throw in your ice cream maker and transform into a wonderful sorbet or skip the freezing and serve it as a drink. I thin it out and use it as a coulis, too.

Ingredients
  • 1 cup 100% unsweetened mango purée (or 1 fresh mango - peeled and cubed)
  • 5 ice cubes
  • 1 Tbsp Honey
  • 1 Tbsp Rose Water
  • 1/8 tsp ground cardamom
  • 1/2 cup orange juice
  • 1 1/2 cups full fat plain yogurt
  • 1/4 tsp salt
  • 1/2 cup whole milk or cream *optional

Directions
  1. In a blender, crush the ice.
  2. Add the remaining ingredients although you should hold back on the milk and only use to thin the lassie out if you find it too thick. Purée until smooth.
  3. Transfer to ice cream maker and follow your machine's instruction for sorbet. If you do not have a machine, transfer to a container and fold every 15 minutes until frozen but malleable.
  4. You can serve this just as a drink with curry dishes or thin out with more OJ and use as a coulis for desserts.
  5. Serve with Madras roasted bananas (see my recipes)
