Crab And Artichoke Chicken In Creamy Brie Sauce Over Linguini Recipe
This is a dish I made up for my MIL"S 70th birthday party, while trying to include many of her (and my ) favorite things. Goes very well with my Green Olive-Garlic Bread.

Ingredients
  • 1 can of Artichoke hearts in water
  • 8 oz lump crab meat
  • 3 T butter
  • 2 T white wine or cooking wine
  • 1 clove of garlic minced
  • 8 chicken tenders or 4 boneless-skinless breasts halved
  • 4 slices of swiss cheese
  • BRIE SAUCE-
  • 1 C white wine or cooking wine
  • 1 T minced garlic
  • 2 tsp finely chopped red onion or shallots
  • 2 C heavy cream
  • 4 oz brie with rind removed, cubed
  • 2 T dijon mustard
  • salt and pepper to taste
  • linguini or prefered pasta

Directions
  1. Coursely chop up crab meat and artichokes
  2. Sautee in a skillet over med heat with 3 T butter and 2 T wine and 1 glove garlic for about 5 min. and set aside
  3. In a sauce pan add 1 C wine, 1 T garlic, and onion or shallots.
  4. Reduce by 1/2. Add cream and simmer for 10 min.
  5. reduce heat and add brie and mustard.
  6. Mix until brie is almost or completely melted (your preference).
  7. Add salt and fresh ground pepper to taste
  8. Put chicken in the bottome of a greased casserole dish.
  9. Cut swiss cheese slices in half and put on top of chicken.
  10. Spread crab mixture evenly over the top.
  11. Pour Brie sauce over the top of that.
  12. Bake at 350 for 45 min.
  13. Serve over linguini or your favorite pasta
