Light Chicken Salad With Cashews

- 1/4 cup fat-free sour cream shopping list
- 1 tablespoon light mayonnaise shopping list
- 1/4 teaspoon curry powder shopping list
- (or replace the curry powder with Emerile La Gasse’s Poultry Rub-½ teaspoon) shopping list
- 2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts) shopping list
- 1/3 cup chopped celery shopping list
- 2 tablespoons chopped dry-roasted cashews shopping list
- 1 tablespoon finely chopped green onions shopping list
- 2 (2-ounce) whole wheat hamburger buns shopping list
How to make it
- Combine first 3 ingredients in a large bowl, stirring until well blended. Add chicken, celery, cashews, and green onions; stir well. Serve chicken salad on buns.
