Rachel And Opals Cheese Straws Recipe
I know there are plenty of recipes already posted but this is the recipe I use and since someone asked for it at Christmas and I'm just getting around to providing it - I decided to post it at the same time. From a tailgating cookbook originally.

Ingredients
  • 1/2 pound extra-sharp cheddar cheese
  • 2 cups all purpose flour
  • 3/4 cup (1 1/2 sticks) unsalted butter, very soft
  • 1/4 teaspoon red pepper flakes
  • 1 1/2 teaspoons salt

Directions
  1. Preheat the oven to 400 degrees.
  2. Shred the cheese and place it in a large bowl. Add the flour, butter, red pepper flakes and salt. Using a large spoon, work the dough until completely mixed. (or use your food processor!)
  3. Put the dough into a cookie press with the star tip attached. Press out 2 inch long strips onto ungreased cookie sheets, leaving about 1/2 inch between them.
  4. Bake for 8 to 10 minutes, until golden. Remove to wire racks to cool.
  5. Cool completely and they can be stored in an airtight container for up to 1 week.

I love these. We make them at Christmas and for the life of me, I don't know why, thats the only time we do them.
