How to make it

  • Combine first 7 ingredients in large pot
  • Bring to boil and cook until salt dissolves
  • Cool to room temperature
  • Remove giblets from chicken
  • Put cold water in resealable 2 gallon plastic bag
  • Add chicken
  • Put into roasting pan
  • Pour brine into bag
  • Turn to coat and refrigerate for 3-4 hours, turning occasionally
  • Preheat oven to 350
  • Discard brine and rinse chicken with water and dry
  • Brush with olive oil
  • Put back into baking pan
  • Bake 75-80 minutes or until 180 degrees
