Brined Roasted Chicken

- 8 cups warm water shopping list
- 1/2 cup kosher salt shopping list
- 1/4 cup brown sugar, packed shopping list
- 3 tbls. molasses shopping list
- 1 tbls. whole peppercorns, crushed shopping list
- 1 tbls. whole allspice, crushed shopping list
- 2 tsp. ground ginger shopping list
- 1-4 lb. roasting chicken shopping list
- 4 cups cold water shopping list
- 1 tbls. olive oil shopping list
How to make it
- Combine first 7 ingredients in large pot
- Bring to boil and cook until salt dissolves
- Cool to room temperature
- Remove giblets from chicken
- Put cold water in resealable 2 gallon plastic bag
- Add chicken
- Put into roasting pan
- Pour brine into bag
- Turn to coat and refrigerate for 3-4 hours, turning occasionally
- Preheat oven to 350
- Discard brine and rinse chicken with water and dry
- Brush with olive oil
- Put back into baking pan
- Bake 75-80 minutes or until 180 degrees
