You betcha I'm from Minnesota. I would be remiss if I didn't include at least one hot dish (that's what a casserole is called here) recipe in my collection. I grew up when casseroles were king and rarely make them now. This is a good one with Minnes... More

Ingredients
  • 2 c. wild rice (soup grade or broken are fine)
  • 2 c. cooked diced chicken (or turkey, duck, or goose)
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/2 c. diced green pepper
  • 1 small can sliced water chestnuts
  • 1/4 c slivered almonds
  • 1 med onion chopped
  • 1 1/2 c celery chopped
  • salt & pepper to taste

Directions
  1. Cook the rice in 4 c water. Simmer until tender, about 30 minutes.
  2. Mix all the ingredients together except the almonds
  3. Bake in a 13X9 pan at 350 F for 70 minutes
  4. Sprinkle with almonds the last 10 minutes.

I am also from the 'covered dish' days.Made them when someone died, got married, had babies, when company was a comingt or just for the family. Yours sound wonderful!
