I love making these on a cast iron griddle or a cast iron skillet. It makes all the difference and you can reach those lovely crusty edges around the toast that only cast iron can achieve. You can use breads with multi-grains, raisins and/or nuts. ... More

Ingredients
  • 4 eggs
  • 1/4 cup of milk
  • 4-5 drops of vanilla extract
  • 2-3 drops of almond extract
  • 1/4 tsp of ground cinnamon
  • butter for cooking or non stick spray
  • maple syrup, honey or jam (for topping)

Directions
  1. In a 13x9 inch baking pan or dish combine the eggs, milk, vanilla and almond extracts and the cinnamon, whisk until well mixed.
  2. Layer 2 bread slices into the egg mixture and let soak for about 2 minutes and then turn and soak the other side.
  3. On a cast iron griddle or skillet heat about 1 Tblsp of butter or non stick spray.
  4. When the griddle is very hot and the butter is melted, place the prepared bread in a single layer and cook for about 2 minutes until golden brown and crusted on the bottom (see the photos above).
  5. Turn the bread around and cook until the other side is golden for 1 to 2 minutes.
  6. Place them on individual serving plates and sprinkle with powdered sugar and serve hot either with maple syrup, honey or jam.
  7. NOTE: If making a large batch of French Toasts, preheat the oven to 200F. and transfer from the griddle or skillet to a baking sheet. Cover lightly with aluminum foil and place in the oven to keep them just warm while you cook the rest of the slices.
