Swiss Cheese Chicken Cutlets Recipe
SWISS CHEESE CUTLETS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Woods Estate in Canton, Texas in 1988.

Ingredients
  • 2 thin slices Swiss cheese
  • 4 chicken cutlets
  • 2 tablespoons flour
  • 1-teaspoon black pepper
  • 1-tablespoon butter
  • 1/2-cup chicken broth
  • 1/4 teaspoon dried oregano

Directions
  1. Cut each cheese slice in half and place 1 half on top of each cutlet.
  2. Starting with a short end tightly roll up cutlets then tie securely with string.
  3. On waxed paper combine flour and pepper then mix well and add cutlets.
  4. Toss gently to coat.
  5. Melt butter over medium heat in large nonstick skillet then add cutlets.
  6. Cook turning frequently until golden about 3 minutes.
  7. Add broth and dried oregano to skillet then increase heat and bring to a boil.
  8. Reduce heat to medium low then simmer until chicken is cooked through.
  9. Place on a serving plate and remove string then serve warm.
