Memaws Broccoli ETC Salad Recipe
I think Memaw made this with what was leftover in the refrigerator. It is a flavorful tasty salad. Great on a bed of lettuce and a nice cheddar pepper biscuit on the side.

Ingredients
  • 4 cups of chopped broccoli flowerettes blanched in boiling water for 3 minutes and then plunged in ice water to refresh.
  • 1 cup of chopped celery
  • 1/2 cup of chopped green onion, green and white both
  • 2/3 cup of toasted slivered almonds
  • 8 strips of fried bacon, cooled crumbled-use more if you want
  • 1 cup of red grapes
  • 1 cup of green grapes
  • 3 cups of chunked chicken (taken from a rotisserie bird)
  • 1 cup of mayonnaise
  • 1/2 tsp of seasoned salt
  • 1/3 cup of sugar
  • 1 1/2 tbsp of white wine vinegar (or apple cider)

Directions
  1. Combine ingredients.
  2. Serve on a bed of lettuce.
  3. We've been known to use melon wedges as a boat for the chicken salad filling allowing 1/3 of a melon per person.
  4. It is sweet crunchy, slightly salty and delicious.
