Cheese and Herb Muffins

- 3 cloves garlic, minced shopping list
- 3 tbsp minced onion shopping list
- 1 tbsp minced, fresh rosemary shopping list
- 1 tbsp minced fresh thyme leaves shopping list
- 1 cup all purpose flour shopping list
- 1 cup whole-wheat pastry flour shopping list
- 1/4 tsp salt shopping list
- 1 1/2 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/4 cup olive oil shopping list
- 2 tbsp honey shopping list
- 1 egg shopping list
- 3/4 cup buttermilk shopping list
- 1/4 cup orange juice shopping list
- 1 cup diced, low-fat swiss cheese shopping list
How to make it
- preheat oven to 400*F
- spray 12 muffin cups with nonstick baking spray, or grease and flour
- set aside
- in small bowl, combine:
- garlic
- onion
- rosemary
- thyme
- Mix all together well
- set aside
- n large bowl, combine:
- all purpose flour, whole-wheat flour
- salt
- baking soda
- baking powder
- In another small bowl, combine:olive oil
- honey
- egg
- buttermilk
- orange juice
- Mix well
- add to flour mixture and blend just until dry ingredients are moistened
- Fold in Swiss cheese.
- Fill muffin cups with batter
- sprinkle each muffin with the onion mixture
- Bake for 18 - 24 minutes, or until golden brown.
- Let cool about 20 minutes.
- Serve warm
