Cajun Chicken And Rice Recipe
Cajun Crockpot Chicken and Rice. This is great dish to slow cook while you are at work. It is comfort food for cajuns! My Family and friends think it is to die for!

Ingredients
  • Large Crockpot
  • 1 whole Chicken
  • 1 lg Bell Pepper
  • 3 stalks of Celery
  • 1 lg Onion
  • 1 bunch of parsley
  • 1 can Cream of Mushroom Soup
  • 2 1/2 cups of Rice(cooked separately)
  • Salt,pepper,creole seasoning(Tony's or whatever), to taste.

Directions
  1. Clean the chicken(keep the liver, it will flavor the dish)
  2. Chop Onion, bell pepper, celery, and parsely, and place in bottom of crockpot.
  3. Empty the can of cream of mushroom on top of veggies
  4. Place the chicken on top of ingredients.
  5. Turn crockpot on high for 6-8 hrs (depending on when you get home from work!)
  6. Remove the chicken with tongs.
  7. De-bone chicken and remove all the skin and fat you can find in the soup.
  8. Place the cooked chicken meat back in the crockpot and stir.
  9. Serve over rice in shallow bowl or plate.
  10. This could be done in a dutch oven on low-med heat on stove top if you don't have a crockpot.
