How to make it

  • Grease quiche pan with butter.
  • Press thawed hash brown potatoes between paper towels
  • Fit the potatoes into pan, cutting and trimming to fit and make a solid crust.
  • Brush potatoes with melted butter, being sure to brush sides also.
  • Bake 25 minutes at 425 degrees.
  • Remove from oven and fill with layers of cheese, ham, onions, and green pepper.
  • Beat cream and 3 or 4 eggs together and pour over cheese, ham, and veggies.
  • Bake at 350 degrees for about 35 minutes or until knife comes out clean.

    I LOVE quiche. Never had made one with potatoes. I'll keep it in mind next time we make it. Unfortunately that's a rare occasion these days as Colby is allergic to eggs....
