Tomato And Basil Rigatoni Recipe
A quick pasta dish we enjoy on busy nights.

Ingredients
  • 12 oz uncooked rigatoni
  • 1 cup shredded mozzarella
  • 1/2 cup fresh basil
  • 1 14.5 oz can diced tomatoes, undrained
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Directions
  1. Combine all ingredients except rigatoni, mix well
  2. Let stand at room temperature for at least 15 minutes to marinate.
  3. Boil water and cook pasta
  4. Drain noodles
  5. Add to tomato mixture and toss to coat.
  6. Serve immediately
  7. Makes 4 1 1/2 cup servings
