Ingredients
  • 60 sh0ml(1pint)milk
  • 110g(4oz) shortcrust pastry
  • 3 tbsp raspberry jam
  • 3 tbsp custard powder
  • 2-3 tbsp dessicated coconut
  • 2 tbsp sugar

Directions
  1. Pre-heat oven to 200c,400f,gas mark6
  2. Roll out dough and line a baking dish with it,bake blind (prick with fork and place greaseproof paper with some baking beans on pastry),bake for 15 min
  3. Allow to cool,then spread the jam over the pastry base and sprinkle with coconut
  4. Boil the milk and whisk into the sugar and custard powder(following manufacturers instructions)until thickened
  5. Pour into the pastry case and sprinkle with coconut,or a little sugar,to prevent a skin forming
  6. Allow to cool completely before serving.(also nice refrigerated then served)
