- 60 sh0ml(1pint)milk shopping list
- 110g(4oz) shortcrust pastry shopping list
- 3 tbsp raspberry jam shopping list
- 3 tbsp custard powder shopping list
- 2-3 tbsp dessicated coconut shopping list
- 2 tbsp sugar shopping list
How to make it
- Pre-heat oven to 200c,400f,gas mark6
- Roll out dough and line a baking dish with it,bake blind (prick with fork and place greaseproof paper with some baking beans on pastry),bake for 15 min
- Allow to cool,then spread the jam over the pastry base and sprinkle with coconut
- Boil the milk and whisk into the sugar and custard powder(following manufacturers instructions)until thickened
- Pour into the pastry case and sprinkle with coconut,or a little sugar,to prevent a skin forming
- Allow to cool completely before serving.(also nice refrigerated then served)
