How to make it

  • Pre-heat oven to 200c,400f,gas mark6
  • Roll out dough and line a baking dish with it,bake blind (prick with fork and place greaseproof paper with some baking beans on pastry),bake for 15 min
  • Allow to cool,then spread the jam over the pastry base and sprinkle with coconut
  • Boil the milk and whisk into the sugar and custard powder(following manufacturers instructions)until thickened
  • Pour into the pastry case and sprinkle with coconut,or a little sugar,to prevent a skin forming
  • Allow to cool completely before serving.(also nice refrigerated then served)
