How to make it

  • beat the eggs, flour, milk and salt till light and frothy
  • let stand for at least an hour at room temp.
  • using, beef drippings or oil, pop a bit into each muffin pan and into a very hot oven (400F or 200C) till the fat is smoking, about 8min.
  • meanwhile stir batter again while adding 2 tablespoons cold water
  • pour into hot muffin pans up to 2/3 full and pop into hot oven for about 25-30 min or until well risen and golden brown
  • serve with your roast and veg with lashings of gravy
