How to make it

  • preheat oven to 160C (325F) or gas mark 3
  • beat the eggs and season with salt and pepper
  • put the flour on a plate
  • coat the aubergine with the flour
  • then dip into the egg mix
  • once all pieces are coated then
  • heat oil and fry the aubergine slices for 5 min each side
  • drain well
  • layer the tomato sauce, aubergine slices, Parmesan, basil leaves and mozzarella in a shallow dish
  • finish with a layer of tomato sauce with cheese on top
  • bake for 30 min or untill the sauce is bubbling and the cheese has melted

    In the USA aubergines are called eggplants. I love this dish.
