Aubergine Parmigiana Recipe
if you like aubergines then you'll love this one, a tasty Italian dish good with a simple salad as a main meal or as a side dish for grilled meats

Ingredients
  • 2 large aubergines sliced length ways
  • 45g 1 1/2 oz plain flour
  • 2 eggs
  • 4 tbl spoons oil
  • salt and ground black pepper
  • 600ml, 1 pint tomato sauce-jar if you wish
  • 60g, 2oz Parmesan cheese grated
  • bunch of basil
  • 300g 10oz mozzarella cheese sliced

Directions
  1. preheat oven to 160C (325F) or gas mark 3
  2. beat the eggs and season with salt and pepper
  3. put the flour on a plate
  4. coat the aubergine with the flour
  5. then dip into the egg mix
  6. once all pieces are coated then
  7. heat oil and fry the aubergine slices for 5 min each side
  8. drain well
  9. layer the tomato sauce, aubergine slices, Parmesan, basil leaves and mozzarella in a shallow dish
  10. finish with a layer of tomato sauce with cheese on top
  11. bake for 30 min or untill the sauce is bubbling and the cheese has melted

In the USA aubergines are called eggplants. I love this dish.


Love eggplant parmesan! It's like a healthier version of lasagna!
