Aubergine Parmigiana

- 2 large aubergines sliced length ways shopping list
- 45g 1 1/2 oz plain flour shopping list
- 2 eggs shopping list
- 4 tbl spoons oil shopping list
- salt and ground black pepper shopping list
- 600ml, 1 pint tomato sauce-jar if you wish shopping list
- 60g, 2oz parmesan cheese grated shopping list
- bunch of basil shopping list
- 300g 10oz mozzarella cheese sliced shopping list
How to make it
- preheat oven to 160C (325F) or gas mark 3
- beat the eggs and season with salt and pepper
- put the flour on a plate
- coat the aubergine with the flour
- then dip into the egg mix
- once all pieces are coated then
- heat oil and fry the aubergine slices for 5 min each side
- drain well
- layer the tomato sauce, aubergine slices, Parmesan, basil leaves and mozzarella in a shallow dish
- finish with a layer of tomato sauce with cheese on top
- bake for 30 min or untill the sauce is bubbling and the cheese has melted
