Jambalaya

- 1 1/2 lbs. smoked sausage(I like the hot ) shopping list
- 2 large onions, chopped shopping list
- 1/2 cup celery, chopped shopping list
- 1 bell pepper, chopped shopping list
- 1 large can tomatoes shopping list
- 2 bay leaves shopping list
- 1/2 tsp. basil shopping list
- 1/2 tsp. thyme shopping list
- 1/2 tsp cayenne shopping list
- 2-3 cloves garlic, chopped shopping list
- 1 10.5 oz. can beef consomme' shopping list
- 1 whole chicken, boiled, deboned and shredded shopping list
- 2 1/2 cups chicken broth shopping list
- 1 cup uncooked rice shopping list
- salt. pepper, Tobasco to taste shopping list
- 1/2 cup chopped green onions shopping list
- 4 Tbsp. chopped parsley shopping list
How to make it
- Slice sausage into small pieces and brown in Dutch oven
- Remove sausage, add onion, celery, bell pepper and saute' until tender.
- Mix in tomatoes, bay leaves, basil, thyme, cayenne and garlic and mix well.
- Add consumme' and chicken broth, simmer 40 min.
- Return sausage to pot and add chicken
- add salt, pepper and Tabasco to taste
- Add rice, cover and cook slowly until rice is tender. Stir occasionally.
- As rice begins to absorb the mixture you may need to add additional water or stock as needed.
- Just before serving add the green onions and parsley.
- Enjoy!
