Ingredients

How to make it

  • Slice sausage into small pieces and brown in Dutch oven
  • Remove sausage, add onion, celery, bell pepper and saute' until tender.
  • Mix in tomatoes, bay leaves, basil, thyme, cayenne and garlic and mix well.
  • Add consumme' and chicken broth, simmer 40 min.
  • Return sausage to pot and add chicken
  • add salt, pepper and Tabasco to taste
  • Add rice, cover and cook slowly until rice is tender. Stir occasionally.
  • As rice begins to absorb the mixture you may need to add additional water or stock as needed.
  • Just before serving add the green onions and parsley.
  • Enjoy!
