Ingredients
  • 1 5 to 6 pound beef brisket
  • salt and pepper
  • 2 large onions. Sliced
  • 1 bottle Chile sauce
  • 1 bottle Beer (Darker stouts will give it a different flavor than a nuttier pilsner)
  • 1/2 a pound of light brown sugar

Directions
  1. Season meat and put on top rack of a 250 degree oven for 2 hours.
  2. Remove from oven, degrease.
  3. Trim off obvious fat and discard.
  4. Lay sliced onions on top of meat
  5. Mix sauce, beer and sugar in a bowl.
  6. Pour 1/2 sauce over the meat.
  7. Roast 3 more hours., basting every so often with remaining sauce.
  8. Slice meat and serve with sauce and onion.
  9. **It may sound like a long time, but brisket needs a long time to cook. Leftovers make great sandwiches the next day.
