Layered Vegan Dinner for Crockpot

A great way to use those vegetables you'll be planting this summer!! Take to a pot luck for a break from the usual offerings. Serve meat on the side if you simply can't go without.
Ingredients
- 6 sliced potatos, sliced shopping list
- 1 large onion, sliced shopping list
- 2 carrots, sliced shopping list
- 1 green pepper, sliced shopping list
- 1 zucchini, sliced shopping list
- 1 cup corn, frozen or fresh shopping list
- 1 cup peas , frozen or fresh shopping list
- mushrooms (optional) shopping list
- broccoli (optional) shopping list
- green beans (optional) shopping list
- Sauce: shopping list
- 2 1/2 cups tomato sauce shopping list
- 1/4 cup low-sodium soy sauce shopping list
- 1 teaspoon ground thyme shopping list
- 1 teaspoon dry mustard shopping list
- 1 teaspoon basil shopping list
- 2 teaspoons chili powder shopping list
- 1/2 teaspoon cinnamon shopping list
- 1/8 teaspoon sage shopping list
- 2 tablespoons parsley shopping list
How to make it
- Layer vegetables in crockpot in order given.
- Mix together ingredients for sauce and pour over vegetables.
- Cook six hours at high or 12 at low.
