How to make it

  • In a small glass bowl, mix the juices, shallots, ginger, vinegar and 4 tablespoons Champagne. Season lightly with salt and pepper.
  • Let sit for 1 hour.
  • In each of four 4-ounce shooter glasses, put 1/4 -cup of citrus mixture.
  • Place 1 oyster on top.
  • Slowly add 2 tablespoons of bubbly.
  • Top with scallion sliver;
