Champagne Oyster Shooter

- 2 tablespoons each of fresh squeezed lemon, lime, orange and grapefruit juice shopping list
- 1 tablespoon finely minced shallots shopping list
- 1 teaspoon finely minced ginger shopping list
- 4 tablespoons champagne vinegar shopping list
- salt and ground black pepper to taste shopping list
- 1 1/4 cups champagne shopping list
- 4 Chincoteague oysters, shucked and removed from shell shopping list
- 1 scallion, finely sliced on bias shopping list
How to make it
- In a small glass bowl, mix the juices, shallots, ginger, vinegar and 4 tablespoons Champagne. Season lightly with salt and pepper.
- Let sit for 1 hour.
- In each of four 4-ounce shooter glasses, put 1/4 -cup of citrus mixture.
- Place 1 oyster on top.
- Slowly add 2 tablespoons of bubbly.
- Top with scallion sliver;
