Southern Bread With Eggs And Potatoes

- 2 medium potatoes (retain water in which potatoes are cooked) shopping list
- 1/2 cup melted shortening shopping list
- 1/4 cup sugar shopping list
- 2 teaspoons salt shopping list
- 1 yeast cake shopping list
- 1/4 cup lukewarm water shopping list
- 1/2 cup milk shopping list
- 2 eggs unbeaten with enough milk to equal 1 cup shopping list
- 6 cups sifted flour shopping list
How to make it
- Boil potatoes until well done then mash and measure 1 cup of water in which potatoes were cooked.
- Combine potatoes and water.
- Add shortening, sugar and salt then mix well.
- Dissolve yeast in lukewarm water then add to potato mixture blending well.
- When mixture has cooled add unbeaten eggs and milk until well blended.
- In another bowl sift flour then add liquid a little at a time and blend into soft dough.
- Knead on lightly floured board for 10 minutes.
- Place dough in bowl then cover and set in warm place until contents doubles in bulk.
- Knead again on floured board.
- Shape into loaves and place in two well greased loaf pans.
- Set in a warm place to rise.
- When doubled in bulk bake at 400 degrees for 20 minutes.
- Set oven back to 300 and bake 20 minutes longer.
- Turn out on wire racks to cool.
