Blood Orange Avocado And Horse Radish Salad Recipe

Ingredients

1/2 large Romaine lettuce - chopped into bite size pieces

1 blood orange - peeled and segmented or sliced in half moons

1 large button mushroom - wiped, halved and finely sliced

1 inch piece of fresh horse radish - peeled and finely grated

1 inch piece of carrot - peeled and finely grated

1 avocado - halved, peeled and cubed

1 garlic clove - finely minced

3 Tbsp olive oil

1 Tbsp white wine vinegar (champagne vinegar would work, too)

Large pinch of coarse salt ( I used black coral salt)

Fresh ground pepper (I used green pepper)

Directions

Toss all ingredients together and adjust seasoning if necessary.

*For a nicer presentation, toss all ingredients except the oranges - they tend to bleed and discolour the mushrooms. Heap the salad onto a plate and arrange the orange segments over top.
