Blackberry Ribbon Pie Recipe
This pie is decadent. I got the recipe from my mother-in-law a few years back and make it about this time every year when blackberries are good and plentiful. Enjoy

Ingredients
  • 1/4 cup granulated sugar
  • 3 ounce package black cherry gelatin
  • 1-1/4 cups boiling water
  • 2 cups fresh blackberries
  • 1 tablespoon lemon juice
  • 3 ounces cream cheese softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1 cup heavy whipping cream
  • 1 baked pie shell

Directions
  1. Dissolve granulated sugar and gelatin in boiling water then allow to cool.
  2. Add berries and lemon juice then chill until slightly thickened.
  3. Whisk together cream cheese, powdered sugar, vanilla and salt.
  4. Whip cream then fold in cream cheese mixture.
  5. Spread half the cream cheese mixture in pie shell and top with half of the gelatin mixture.
  6. Repeat layers then chill until set.
