Easy Pumpkin Apple Butter Recipe

Ingredients

1 (15 oz) can pumpkin

1 medium apple, peeled and grated

1 cup 100% pure apple juice (I use Simply Apple Juice)

1/2 firmly packed brown sugar

1 teaspoon ground cinnamon

1/8 teaspoon ground cloves

1/2 teaspoon pure vanilla

Directions

Combine all ingredients in a medium, heavy-bottomed saucepan.

Bring to a boil; reduce heat to low. Cook, stirring occasionally for 1 1/2 hours. Pumpkin butter should thicken as the water is cooked out. Mixture should be quite thick at the end. Be careful not to scorch.

Let cool in pan for 20 minutes. Spoon into clean glass jars or a plastic container. May be stored in the refrigerator for up to 2 months.

This is great on toast, muffins, bisquits or scones.
