Easy Pumpkin Apple Butter
From peggy_cookingfool 16 years agoIngredients
- 1 (15 oz) can pumpkin shopping list
- 1 medium apple, peeled and grated shopping list
- 1 cup 100% pure apple juice (I use Simply apple juice) shopping list
- 1/2 firmly packed brown sugar shopping list
- 1 teaspoon ground cinnamon shopping list
- 1/8 teaspoon ground cloves shopping list
- 1/2 teaspoon pure vanilla shopping list
How to make it
- Combine all ingredients in a medium, heavy-bottomed saucepan.
- Bring to a boil; reduce heat to low. Cook, stirring occasionally for 1 1/2 hours. Pumpkin butter should thicken as the water is cooked out. Mixture should be quite thick at the end. Be careful not to scorch.
- Let cool in pan for 20 minutes. Spoon into clean glass jars or a plastic container. May be stored in the refrigerator for up to 2 months.
- This is great on toast, muffins, bisquits or scones.
