How to make it

  • Heat oven to 450. In large bowl,toss asparagus and scallions with the oil from the sun -dried tomatoes. Transfer to baking sheet and arrange in even layer. Season with salt and pepper.
  • Roast about 7 mins. Stir the vegetables and roast till tender and slightly browned,about another 5 mins. Sprinkle with chopped sun-dried tomatoes and toss to combine. Serve immediately or at room temperature.
