California Pasta Salad Recipe
No mayo which makes it nice for warm weather dining.

Ingredients
  • 1 (12 ounce) jar marinated artichoke hearts
  • 1/8 teaspoon ground black pepper
  • 8 ounces medium shell pasta, cooked and drained
  • 1/4 cup white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/4 cup shelled sunflower seeds
  • 1 small cucumber, halved and sliced
  • Juice of 1 lime
  • 1 clove garlic, minced
  • 2 tomatoes, seeded and diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried marjoram

Directions
  1. Drain artichokes, reserving marinade.
  2. Whisk reserved marinade with vinegar, mustard, lime juice, garlic, salt, marjoram and pepper.
  3. Toss together pasta, artichokes, sunflower seeds, cucumber and tomato.
  4. Pour dressing over. Toss to coat.
