my friend makes this cornmeal mush by 3 loaf pans. Its just him! I finally made it. 1 loaf. I like it lots. swimming in maple syrup. mmmm

Ingredients
  • 1 c. cornmeal
  • 1 c. cold water
  • 3 c. water
  • 1 teas. salt
  • 1T. butter, bacon fat, or veg. oil
  • 2 T. flour

Directions
  1. Stir cornmeal into 1 c. cold water in a bowl
  2. Bring 3 c. water and salt to a boil in a large saucepan. A
  3. Add cornmeal mixture to the boiling water gradually, stirring constantly.
  4. cook for 5 to 10 minutes or until thickened.
  5. Pour into loaf pan and let cool.
  6. cover with plastic wrap and fridge over night.
  7. Slice 1/4 to 1/2 inch slices and dredge lightly in flour.
  8. Fry in hot butter, or bacon fat or oil until golden brown. I use maple Syrup. so does Kenny.

I don't think my husband likes it. He didn't go back for seconds. Oh well, more for me. Got over 1/2 left for me. everyone has turned their nose up at it. afraid to try.lol
