Barley Bake

- 2t canola oil shopping list
- 1 medium onion, diced shopping list
- 1c uncooked pearl barley shopping list
- 1/2c pine nuts, sunflower seeds, almonds or walnuts shopping list
- 2 green onions, thinly sliced shopping list
- 1/2c sliced fresh mushrooms shopping list
- 1/2c chopped fresh parsley (opt) shopping list
- 1/4t salt shopping list
- 1/8t pepper shopping list
- 2 (14.5 ounce) cans low-sodium vegetable, beef or chicken broth shopping list
How to make it
- Preheat oven to 350 degrees F (175 degrees C).
- Heat oil in a skillet over medium-high heat. Stir in onion, barley, and pine nuts. Cook and stir until barley is lightly browned. Mix in green onions, mushrooms, and parsley. Season with salt and pepper. Transfer the mixture to a 2 quart casserole dish, and stir in the vegetable broth.
- Bake 1 hour and 15 minutes in the preheated oven, or until liquid has been absorbed and barley is tender.

I love barley and it is so good for you! A lower G.I. (glycaemic index) than say, potatoes or rice, for a side dish. Good if you're diabetic like me.
