BBQ Bacon Meatloaf Recipe
My boyfriend really likes this, I like it well enough. I'm not a huge fan of meatloaf whereas he could eat meatloaf or ham everyday of the week. I do like the flavor of the bacon in it though. It's not your everyday meatloaf!

Ingredients
  • 16 oz extra lean ground beef
  • 1/4 cup bacon bits
  • 3/4 cup finely chopped onion
  • 15 Ritz reduced fat crackers, crushed
  • 6 T. reduced sodium ketchup
  • 1/4 cup skim milk
  • 1/4 cup white vinegar
  • 1 t. dried parsley flakes
  • 1 1/2 t. Worcestershire sauce
  • I like to throw some crushed pineapple in it when he's not looking ;)

Directions
  1. Preheat oven to 350. Spray a 9x5 loaf pan with cooking spray. In a large bowl, combine meat,crushed ritz crackers, bacon bits,1/2 cup onion, 2 T. ketchup and skim milk. Mix well & pat into loaf pan. Bake for 50-60 minutes. About 10 minutes before meatloaf is done, saute remaining onion in skillet sprayed with olive oil spray. Add remaining ketchup, vinegar, parsley, WOrcestershire. Mix well. Bring to a boil then lower heat and simmer for 5 minutes. Place loaf pan on wire rack. Drizzle sauce over loaf. Let set for 5 minutes
