Ingredients
  • 2 lb pork cubes
  • 1/4 c olive oil
  • 1/4 c red wine
  • 1 ts dried oregano
  • juice of 1 lemon
  • 1 garlic clove; crushed
  • pepper; to taste
  • salt; as needed

Directions
  1. Put the pork in a large bowl or strong food bag.
  2. Add the olive oil, wine, oregano, lemon juice, garlic and pepper.
  3. Mix together so that all the pork is completely coated, then chill and marinate for at least a few hours or overnight.
  4. Lift the chunks of pork out of the marinade and thread onto 4 metal skewers, or wooden ones that have been soaked.
  5. Season the meat with salt, then cook the skewers for 10-12 minutes, turning, until cooked to your liking.
  6. Serve tucked into warm flatbreads and drizzle with tzatziki.
