Baked Chicken Salad Recipe
It's a bit unique, but it pack a lot of flavor. Kid love it because of the potato chips!!!

Ingredients
  • 3 cups cooked, diced chicken breast
  • 1-1/2 cups diced celery, try to get the "strings" off
  • 6 ounces of your favorite cheese (I generally use mozzarella or monterey jack)
  • 1 tablespoon chopped onion
  • 1 tablespoon lemon juice
  • salt and pepper to taste
  • mayonnaise...just keep the jar close
  • 2 cups crushed potato chips

Directions
  1. Combine chicken, celery, 1/2 the cheese,onion, lemon juice, salt and pepper, and enough mayonnaise to moisten it. (I've never measured that so it's to your liking)
  2. Toss lightly.
  3. Place in casserole dish.
  4. Bake at 350 degrees for 25 minutes.
  5. Combine remaining cheese and potato chips.
  6. Sprinkle on casseole.
  7. Return to oven and bake until the cheese melts and/or bubbles.

A tip to get the "strings" off is to use a vegetable peeler on the outer layer of the celery. I personally don't mind the strings, but it works pretty well.
