Salmon is one of my favorite foods to bake, it is very versatile generally speaking. This recipe I found it on a Salmon recipes website and decided to give it a try because I happened to have all the ingredients handy at home- GREAT CHOICE !!!!

Ingredients
  • 1/4 cup of butter (melted)
  • 3 Tblsp of Dijon mustard
  • 1 1/2 Tblsp of honey
  • 1/4 cup of dry bread crumbs
  • 1/4 cup of finely chopped pecans
  • 4 tsp chopped fresh parsley
  • 4 (4oz.) fillets of salmon
  • 1 lemon for garnish (optional)
  • salt & pepper to taste

Directions
  1. (Preheat oven to 400F.)
  2. In a small bowl, stir together butter, mustard and honey, set aside.
  3. In a food processor or blender put together the breadcrumbs, the pecans and the parsley.
  4. Hit the chop first to crumble the pecans and then grind to reach a thinner texture (like sand) or like a thick powder.
  5. Once you reach that point, transfer to a bowl and set aside.
  6. Season the salmon fillets with salt & pepper and then brush each one lightly with honey mustard mixture.
  7. Sprinkle evenly the top of the fillets with the prepared breadcrumb mixture.
  8. Bake salmon uncovered in preheated oven until it flakes easily with a fork, approximately 10 to 15 minutes. (Always remember that salmon cooks really quick).
  9. Garnish with a wedge of lemon if desired.
  10. Serve with mashed potatoes, steamed veggies, creamed spinach or pasta salad.
