How to make it

  • (Preheat oven to 400F.)
  • In a small bowl, stir together butter, mustard and honey, set aside.
  • In a food processor or blender put together the breadcrumbs, the pecans and the parsley.
  • Hit the chop first to crumble the pecans and then grind to reach a thinner texture (like sand) or like a thick powder.
  • Once you reach that point, transfer to a bowl and set aside.
  • Season the salmon fillets with salt & pepper and then brush each one lightly with honey mustard mixture.
  • Sprinkle evenly the top of the fillets with the prepared breadcrumb mixture.
  • Bake salmon uncovered in preheated oven until it flakes easily with a fork, approximately 10 to 15 minutes. (Always remember that salmon cooks really quick).
  • Garnish with a wedge of lemon if desired.
  • Serve with mashed potatoes, steamed veggies, creamed spinach or pasta salad.
