Dijon Salmon

- 1/4 cup of butter (melted) shopping list
- 3 Tblsp of Dijon mustard shopping list
- 1 1/2 Tblsp of honey shopping list
- 1/4 cup of dry bread crumbs shopping list
- 1/4 cup of finely chopped pecans shopping list
- 4 tsp chopped fresh parsley shopping list
- 4 (4oz.) fillets of salmon shopping list
- 1 lemon for garnish (optional) shopping list
- salt & pepper to taste shopping list
How to make it
- (Preheat oven to 400F.)
- In a small bowl, stir together butter, mustard and honey, set aside.
- In a food processor or blender put together the breadcrumbs, the pecans and the parsley.
- Hit the chop first to crumble the pecans and then grind to reach a thinner texture (like sand) or like a thick powder.
- Once you reach that point, transfer to a bowl and set aside.
- Season the salmon fillets with salt & pepper and then brush each one lightly with honey mustard mixture.
- Sprinkle evenly the top of the fillets with the prepared breadcrumb mixture.
- Bake salmon uncovered in preheated oven until it flakes easily with a fork, approximately 10 to 15 minutes. (Always remember that salmon cooks really quick).
- Garnish with a wedge of lemon if desired.
- Serve with mashed potatoes, steamed veggies, creamed spinach or pasta salad.
