SKILLET STYLE LASAGNA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Montgomery Estate in Garland, Texas in 1986.

Ingredients
  • 8 ounces uncooked turkey sausage
  • 1/2 cup chopped onion
  • 2 cups spaghetti sauce
  • 1 cup water
  • 2 cup dried wide noodles
  • 1-1/2 cups ricotta cheese
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon snipped fresh parsley
  • 1/2 cup shredded mozzarella cheese

Directions
  1. In large skillet cook sausage and onion until meat is brown breaking up during cooking.
  2. Drain fat then stir in spaghetti sauce and water and bring to a boil.
  3. Stir in noodles and zucchini then return to boiling then reduce heat.
  4. Simmer covered 12 minutes or until noodles are tender stirring occasionally.
  5. Meanwhile in small bowl stir together ricotta cheese, parmesan cheese and parsley.
  6. Using a spoon drop cheese mixture into 6 mounds on top of sausage mixture.
  7. Sprinkle with mozzarella cheese then cook covered over low heat for 5 minutes.
  8. Let stand 10 minutes before serving.
