Mexican Meatloaf

Mexican style meatloaf done with turkey. Full of flavor.
Ingredients
- 2pkgs. ground turkey(20.8oz each) shopping list
- 1 can(10 oz) diced tomatoes and green chilies,drained shopping list
- 1c chopped onions shopping list
- 1c cooked quinoa shopping list
- 1c mexican-style cheese blend shopping list
- 1/4c fresh cilantor,chopped shopping list
- 2tsp chopped garlic shopping list
- 2 eggs shopping list
- 1 pkg(1.25 oz) taco seasoning mix shopping list
- 1 tsp salt shopping list
- 1/3c mexican -style cheese blend shopping list
How to make it
- In bowl combine all but 1/3c cheese blend. Transfer mixture to a 9x5: loaf pan;pat down
- Bake 1 hour and 10 mins. Sprinkle with 1/3 c. mexican-style cheese blend. Bake 10 mins. or till thermometer reads 165 and cheese is melted. Drizzle with prepared gravy,if desired
