How to make it

  • Preheat oven to 350 degrees.
  • Spray a 13x9x2-inch pan with vegetable oil spray; then dust with flour.
  • In a large mixing bowl, sift together flour, salt and baking soda.
  • Whisk in applesauce, sugar, eggs, vanilla, coffee and 1/2 of the melted chocolate; beat for 1 minute by hand.
  • Add remaining chocolate and beat for 2 more minutes until chocolate is fully incorporated.
  • Pour into pan and immediately place on middle rack of preheated oven.
  • Bake 35 to 40 minutes, or until a toothpick inserted into the center, comes out clean.
  • Let cool in the pan for 10 –15 minutes, then run a knife around the outside of the pan until the cake easily slides out.
  • Allow the cake to fully cool on a rack before cutting or frosting.
  • Sprinkle top with powdered sugar or spread with instant low-fat chocolate pudding.
