Low-Fat Red Devils Cake

- 1 1/2 cup cake flour shopping list
- 1 tsp. baking soda shopping list
- 1/8 tsp. salt shopping list
- 2 tbsp. flour for pan coating shopping list
- 3/4 cup unsweetened applesauce shopping list
- 1 cup turbinado natural sugar shopping list
- 2/3 cup unsweetened chocolate morsels , melted shopping list
- 2 eggs unbeaten shopping list
- 1 tsp. vanilla extract shopping list
- 3/4 cup strong coffee shopping list
- vegetable oil spray shopping list
How to make it
- Preheat oven to 350 degrees.
- Spray a 13x9x2-inch pan with vegetable oil spray; then dust with flour.
- In a large mixing bowl, sift together flour, salt and baking soda.
- Whisk in applesauce, sugar, eggs, vanilla, coffee and 1/2 of the melted chocolate; beat for 1 minute by hand.
- Add remaining chocolate and beat for 2 more minutes until chocolate is fully incorporated.
- Pour into pan and immediately place on middle rack of preheated oven.
- Bake 35 to 40 minutes, or until a toothpick inserted into the center, comes out clean.
- Let cool in the pan for 10 –15 minutes, then run a knife around the outside of the pan until the cake easily slides out.
- Allow the cake to fully cool on a rack before cutting or frosting.
- Sprinkle top with powdered sugar or spread with instant low-fat chocolate pudding.
