How to make it

  • Preheat oven to 220 degrees celsius, brush a baking tray with a little olive oil.
  • Drain spinach leaves and press as much liquid out as possible.
  • Heat olive oil in a frying pan and saute onion and garlic for 4 min on medium heat , add tabasco and saute 1 min more,add peppers, zucchini and aubergine cook 7 min till vegetables are soft, taste with salt and pepperand set aside to cool.
  • Put brushed pastry crust in an oven tray and put spinach on , top with the cold vegetable mixture, top with cheeses and basilicum.
  • Roll the leaves and brush all around with olive oil and put in the tray the end under.
  • Top with seam seeds and bake for 30 min till golden brown and crispy.
  • Cut and serve warm.
