Ingredients

1lb pork butt and rib, cubed

1 bell pepper, seeded and chopped

1 small onion, peeled and chopped

1 tbsp rice wine

1 tbsp light soy sauce

2 tsp sesame oil

1 tsp cornflour

1½ tbsp peanut oil

3 tbsp black bean sauce (asian most supermarkets)

1 tbsp garlic, finely chopped

2 tbsp Kim Chee, chopped

1½ tbsp light soy sauce

1 tsp sugar

1 tbsp water

1 tbsp sesame oil

Directions

Put pork in a bowl and mix with rice wine, soy sauce, sesame oil and cornflour. Marinate for about 20 minutes.

Heat a wok or skillet until it is very hot. Add half the peanut oil and swirl.

Lift pork out of the marinade with a slotted spoon, put it in the wok and quickly stir fry it for about 2-3 minutes until 75 percent cooked. Transfer to a bowl.

Clean skillet, reheat it and add the rest of the oil. Quickly add the black beans, garlic, onions, pepper and Kim Chee and stir fry until soften.

A few seconds later add the rest of the liquid ingredients.

Bring the mixture to a boil and then return the pork to the skillet and stir fry for another 5 minutes.

Serve with rice.
