This quick and tasty dish marries both black bean and kim chee in a dish. Excellent sauce for pork, chicken, fish or even tofu. Delicious with rice or noodles.

Ingredients
  • 1lb pork butt and rib, cubed
  • 1 bell pepper, seeded and chopped
  • 1 small onion, peeled and chopped
  • 1 tbsp rice wine
  • 1 tbsp light soy sauce
  • 2 tsp sesame oil
  • 1 tsp cornflour
  • 1½ tbsp peanut oil
  • 3 tbsp black bean sauce (asian most supermarkets)
  • 1 tbsp garlic, finely chopped
  • 2 tbsp Kim Chee, chopped
  • 1½ tbsp light soy sauce
  • 1 tsp sugar
  • 1 tbsp water
  • 1 tbsp sesame oil

Directions
  1. Put pork in a bowl and mix with rice wine, soy sauce, sesame oil and cornflour. Marinate for about 20 minutes.
  2. Heat a wok or skillet until it is very hot. Add half the peanut oil and swirl.
  3. Lift pork out of the marinade with a slotted spoon, put it in the wok and quickly stir fry it for about 2-3 minutes until 75 percent cooked. Transfer to a bowl.
  4. Clean skillet, reheat it and add the rest of the oil. Quickly add the black beans, garlic, onions, pepper and Kim Chee and stir fry until soften.
  5. A few seconds later add the rest of the liquid ingredients.
  6. Bring the mixture to a boil and then return the pork to the skillet and stir fry for another 5 minutes.
  7. Serve with rice.
