How to make it

  • Pre-heat oven to 350 degrees
  • Grease a 10" round cake pan & line with wax paper
  • Rub the butter into the flour until the mixture resembles fine bread crumbs
  • Stir in the sugar, eggs & milk to form a soft dough
  • Roll out the dough on a lightly floured surface to form a 14" square
  • Brush the melted butter over the surface of the dough
  • Mix together the apricots & the chocolate chips & spread them over the the dough to within 1" of the top & bottom
  • Roll up the dough tightly, like a jelly roll & cut it into 1" slices
  • Lay the slices around the edge of the pan, overlapping slightly
  • Brush with a little milk
  • Bake for about 30 mins, or until cooked & lightly golden
  • Cool the cake in the pan for about 15 mins & then carefully transfer to a wire rack to cool
  • Drizzle the melted chocolate over the ring to decorate.

  • NOTE:- Best served the same day it is made. It is wonderful served warm.
  • Golden raisins can be used instead of the chocolate chips
