Apricot-Chocolate Ring

- 1/3 cup butter - diced shopping list
- 4 cups self-rising flour - sifted shopping list
- 4 Tblspns super-fine sugar shopping list
- 2 eggs - beaten shopping list
- 2/3 cup milk shopping list

- Filling & Decoration:- shopping list
- 2 Tblspns butter - melted shopping list
- 2/3 cup dried aprocots - chopped shopping list
- 3 1/2 ozs semi-sweet chocolate chips shopping list
- 1 - 2 Tblspns milk - to glaze shopping list
- 1 oz dark or semi-sweet chocolate - melted shopping list
How to make it
- Pre-heat oven to 350 degrees
- Grease a 10" round cake pan & line with wax paper
- Rub the butter into the flour until the mixture resembles fine bread crumbs
- Stir in the sugar, eggs & milk to form a soft dough
- Roll out the dough on a lightly floured surface to form a 14" square
- Brush the melted butter over the surface of the dough
- Mix together the apricots & the chocolate chips & spread them over the the dough to within 1" of the top & bottom
- Roll up the dough tightly, like a jelly roll & cut it into 1" slices
- Lay the slices around the edge of the pan, overlapping slightly
- Brush with a little milk
- Bake for about 30 mins, or until cooked & lightly golden
- Cool the cake in the pan for about 15 mins & then carefully transfer to a wire rack to cool
- Drizzle the melted chocolate over the ring to decorate.

- NOTE:- Best served the same day it is made. It is wonderful served warm.
- Golden raisins can be used instead of the chocolate chips
