Pear Muffins with Ginger Cream Spread

- Muffins: shopping list
- 1 3/4 cup flour shopping list
- 3/4 cup brown sugar shopping list
- 1 tbs baking powder shopping list
- 1/2 tsp powdered ginger shopping list
- OR shopping list
- 1 Tbs finely chopped crystalized ginger shopping list
- 1/4 tsp salt shopping list
- 1 cup chopped fresh peeled pear shopping list
- 1 cup whole bran cereal shopping list
- 1 cup skim milk shopping list
- 1 beaten egg or egg substitute equivelent shopping list
- 1/4 cup oil shopping list
- topping shopping list
- 2 Tbs finely chopped almonds shopping list
- 1 recipe ginger spread: shopping list
- 4 oz cream cheese room temp shopping list
- 1/4 cup butter, softened shopping list
- 2 1/4 cup powder sugar shopping list
- 1/4 cup crystalized ginger, fine chopped shopping list
- 1 tsp powdered ginger shopping list
- pinch salt shopping list
How to make it
- In a large mixig bowl combine flour and sugar, baking powder and ginger.
- Stir in pear to coat with mixture
- In another bowl cover cereal with milk and let sit about 5 minutes
- Then stir in egg and oil
- Place mixture in an airtight container, cover and store in refrigerator up to 3 days or bake muffins immediately if desired.
- Spoon batter into muffin tins 3/4 full
- Sprinkle with almonds
- bake 400f 18 to 20 minutes or tested done.
- Cool to warm on wire rack
- Serve warm with ginger spread
- For spread:
- Beat all with electric mixer adding powder sugar slowly, beating till fluffly. Stir in crystalized ginger last .
