Different twist on this very refreshing coleslaw with the addition of fennel, and raisins

Ingredients
  • Dressing:
  • 3/4 cup orange juice
  • 6 Tbs olive oil
  • 1/3 cup red wine vinegar
  • 1 1/2 Tbs sugar
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Salad:
  • 4 cup shre4dded Savory or regular green cabbage
  • 2 cups shredded red cabbage
  • 1 bulb fennel trimmed and thinly sliced
  • 1/2 cup sliced red onion
  • 1/3 cup pitted oil cured olives
  • 1/2 cup golden raisins
  • 1/2 cup slivered fresh mint leaves

Directions
  1. Whisk dressing to blend
  2. Add remaining ingrdients except mint and toss to coat
  3. Chill at least one hour
  4. When ready to serve, add mint, toss and serve
