Hot Curried Vegetables

- 1 onion, diced shopping list
- 2 cloves garlic, crushed shopping list
- 1 birdseye chilli, finely chopped shopping list
- vegetable oil for frying shopping list
- 2 potatoes, peeled and diced shopping list
- 1 carrot, finely chopped shopping list
- 1/2 cup water shopping list
- 1/4 cup frozen peas shopping list
- 1/2 cup coconut milk shopping list
- salt and pepper shopping list
How to make it
- Heat oil in frypan, add onion, garlic and chilli and saute for a couple of minutes until onion's soft. Add vegetable, stir to coat with spice.
- Add water, reduce heat to low, cover and cook for 10 minutes, add the peas and cook 3 minutes further. Stir in coconut milk when vegetables are tender.
- Serve in a bowl with basmati rice
