Vegetarian Matzoh Balls

- 4 large eggs separated shopping list
- 1 tsp salt shopping list
- dash cayanne pepper shopping list
- 2 tsp white onion grated shopping list
- 2 Tbs unsalted butter , melted shopping list
- 3/4 cup matzoh meal shopping list
- 7 cups vegetable stock shopping list
- addtional stock or soup for serving shopping list
How to make it
- Beat whites till stiff peaks.
- Whisk the yolks, salt, pepper, onion and butter together.
- Fold in the white just to blend
- Gently forld in the matzoh meal in several additions
- Cover bowl with plastic wrap and chill one hour.
- In a large pot bring stock to a boil.
- Moisten hands with cold water and roll mixture into 3/4 inch balls.
- After all balls are formed, drop into the boiling stock.
- Return to a boil and cover, reduce heat to a simmer and cook simmered 30 minutes.
- Remove with a slotted spoon and serve in vegetable stock or chicken soup
- Makes 20 balls
