Lemon Freeze

- 1/4 cup of cornflake crumbs shopping list
- 2 tbsp. of sugar shopping list
- 1/4 cup of melted butter shopping list
- 2 eggs separated shopping list
- 1 15 oz. tin of condensed milk shopping list
- 1/3 cup of fresh lemon juice shopping list
- 1/2 teaspoon of grated lemon peel shopping list
- 3 tbsp. of sugar shopping list
How to make it
- Combine corn flake crumbs, first two tablespoons of sugar and melted butter.
- Press into a 8 inch loaf pan or 8 inch pie pan, reserving 2 tablespoons of crumbs for garnish.
- Beat egg yolks until thick and lemon colored.
- Combine with condensed milk.
- Add lemon juice and lemon rind.
- Beat egg whites until stiff but not dry.
- Gradually add in remaining three tablespoons of sugar.
- Fold gently into the lemon mixture.
- Pour into crumb lined pan.
- Sprinkle with reserved crumbs.
- Freeze until firm.
- Cut into wedges to serve.
- Can be garnished with fresh berries.
