Ingredients
  • 1/4 cup of cornflake crumbs
  • 2 tbsp. of sugar
  • 1/4 cup of melted butter
  • 2 eggs separated
  • 1 15 oz. tin of condensed milk
  • 1/3 cup of fresh lemon juice
  • 1/2 teaspoon of grated lemon peel
  • 3 tbsp. of sugar

Directions
  1. Combine corn flake crumbs, first two tablespoons of sugar and melted butter.
  2. Press into a 8 inch loaf pan or 8 inch pie pan, reserving 2 tablespoons of crumbs for garnish.
  3. Beat egg yolks until thick and lemon colored.
  4. Combine with condensed milk.
  5. Add lemon juice and lemon rind.
  6. Beat egg whites until stiff but not dry.
  7. Gradually add in remaining three tablespoons of sugar.
  8. Fold gently into the lemon mixture.
  9. Pour into crumb lined pan.
  10. Sprinkle with reserved crumbs.
  11. Freeze until firm.
  12. Cut into wedges to serve.
  13. Can be garnished with fresh berries.
