How to make it

  • Combine corn flake crumbs, first two tablespoons of sugar and melted butter.
  • Press into a 8 inch loaf pan or 8 inch pie pan, reserving 2 tablespoons of crumbs for garnish.
  • Beat egg yolks until thick and lemon colored.
  • Combine with condensed milk.
  • Add lemon juice and lemon rind.
  • Beat egg whites until stiff but not dry.
  • Gradually add in remaining three tablespoons of sugar.
  • Fold gently into the lemon mixture.
  • Pour into crumb lined pan.
  • Sprinkle with reserved crumbs.
  • Freeze until firm.
  • Cut into wedges to serve.
  • Can be garnished with fresh berries.
